Normally, an Irish slow cooker chicken stew would contain a lot of boiled potatoes. If you’re still in the early phases of an elimination diet you cannot yet indulge in the white potatoes. This stew maintains its hearty fillingness with lots of brown rice. You’ll also find the cabbage to be quite filling as it contains a lot of healthy fiber.
You might not have caraway seeds in your spice cabinet. I honestly don’t use them very often but they’re good to keep on hand for the few recipes that really cry for them. Caraway pairs amazingly well with apples and the two really come through together in this healthy stew. I use one green apple just for a little extra flavor and texture but if you would like more go ahead and throw another one in closer to the end of the cook time to maintain the texture better. If you put the chopped apple in at the beginning it will essentially disappear.
Keep the leftover apple juice on hand for when you’re really craving a sweet treat beverage that you can’t have on the elimination diet. I used to have a weekly cherry coke but had to stop with the elimination of corn. Apple and other juices help take the edge off of the sweet drink cravings. I’ve also found that some stores have individual serving bottles of apple juice available if you look in the non-refrigerated juice section. This helps to eliminate the extra juice problem altogether.
Why eliminate nightshades?
Nightshades are a family of fruits and vegetables that include tomatoes, bell peppers, jalepenos and other spicy peppers, white potatoes, and eggplants. Some people have an allergy or intollerance to one of more of these so it is important to include them in your elimination diet.

- 1 large yellow onion
- 3 large carrots
- 1 green apple, peeled and cored
- 1 cup apple juice (no corn syrup added)
- 1 cup chicken broth
- 1 ½ tsp caraway seeds
- ½ tsp black pepper
- 2 tsp salt or to taste
- olive oil
- 4 cups cooked brown rice
Instructions
- drizzle olive oil into bottom of slow cooker
- place trimmed chicken breasts along the bottom
- chop veggies coarsely and place on top of chicken
- dump the remaining seasoning and liquid ingredients on top
- put lid on crock pot, cook HIGH for 4 to 6 hours, until chicken starts to shred
- serve on cooked brown rice
