This slow cooker Moroccon style chicken is so simple I threw it together in maybe 20 minutes! It will take a bit longer to prepare if you choose to debone your own chicken thighs but that extra time more than pays off in how much money you’ll save.
Check out how to use all the bones and skin you remove to make a delicious and nourishing broth with no added preservatives or any ingredients that are troublesome to an elimination diet here. I removed the skin and left the bones to make the broth richer while it was cooking in the slow cooker, just remove the bones after the chicken is cooked, it should be falling off of them anyway!
The olives and raisins in this recipe are what really make it stand out from any other basic slow cooker chicken recipe. The brininess of the olives compliments the sweet raisins and both bring out the other seasonings making this a complexly flavored dish that is sure to mix up your dinner rut. This recipe calls for golden raisins but if you want to use regular raisins it won’t change the taste much, just the way it looks.
If you’re on a budget like I am feel free to buy whatever cheap jar of olives you can find. They don’t have to be extra fancy but if you can find plain green pitted olives go for those. You need to be wary of what the olives are stuffed with. Pimentos are a nightshade and likely not allowed on your elimination diet. You can usually find an olive bar at most grocery stores that will have more options and you can just buy as many as you’ll need for the one recipe.
Nutritional benefits of olives
The main nutritional benefit found in olives is Vitamin E. A serving of high quality olives contains nearly an entire day’s worth of vitamin E! Vitamin E is fat soluable vitamin that is necessary for the proper function of many organs. It also provides antioxidant properties and has beeen theorized to provide benefits to preventing certain cancers.
Olives are typically high in fat and salt so you don’t want to go overboard but you’ll reap a lot of the vitamin E benefits with just a small serving so throw some olives into your elimination diet recipes!
Ingredients
- 6 chicken thighs, boneless/skinless or bone in with skin removed
- 1 yellow onion, chopped
- 2 large carrots, chopped large
- 1 stalk celery, diced
- 3 cloves garlic, minced
- 1 ½ cups chicken broth
- 2 tbsp apple cider vinegar
- 2 tsp ground cumin
- ½ tsp cinnamon
- 1 tsp ground ginger
- ½ tsp coriander
- ¼ tsp ground turmeric
- 2-3 tsp salt, or to taste
- ¼ tsp black pepper
- 1 tbsp olive oil
- ⅓ cup green olives
- ⅓ cup golden raisins
- 3 cups cooked basmati rice
Instructions
- place chicken thighs in slow cooker and drizzle lightly with olive oil
- add all other ingredients except the olives, raisins, and cooked rice
- cook on high for 4 hours
- if using bone in chicken, remove the bones and return chicken to pot
- stir in the olives and raisins
- serve hot on top of rice
