I love oatmeal. It’s healthy, tasty, and super easy to make for any meal of the day. This chocolate cherry oatmeal is one of my favorite breakfasts or snacks for when you are looking to mix up your basic oats. This elimination diet recipe comes together in under five minutes and will keep you full for hours.
I think that these oats taste sweet enough with just the cherries and sweetened coconut. However, feel free to add your favorite sweetener of choice to make it even more delicious. Maple syrup, honey, or brown sugar would all work very well in this recipe.
You may also add more toppings if you would like. I am a big fan of adding slivered almonds or crushed walnuts to oatmeal. If your diet allows for tree nuts definitely throw a handful in there. Hazelnuts also go quite well with chocolate and cherries if you happen to have those on hand.
This chocolate cherry oatmeal is also a great snack. Oatmeal is typically low in calories but long lasting at keeping your full. I have oatmeal almost every day after I get off of work. It’s my favorite bed time snack. Easy to digest and perfect for right before bed. And if you’ve had a long day what is better than a little chocolate!
Ingredients
- 1/2 cup rolled oats
- 1 cup coconut milk (or plain or vanilla milk of choice)
- 1/2 cup pitted cherries (fresh or frozen)
- splash vanilla extract
- dash salt
- 1 tbsp unsweetened cocoa powder
- 1/4 tsp cinnamon
- 1 tbsp sweetened shredded coconut (optional)
Instructions
- place oats, milk, cherries, vanilla, cocoa, and salt in a microwave safe bowl
- microwave for 90 seconds
- remove and stir
- microwave for another 90 seconds for frozen cherries, 30 seconds for fresh
- stir again and let sit for 2-5 minutes
- top with cinnamon and shredded coconut
- enjoy hot
